The Enso HD Chinese Chef’s Knife is a cutlery staple in Asian kitchens. Although the shape resembles a western cleaver, this blade is thinner and lighter. Enso HD blades are constructed of 37-layer stainless steel Damascus with a VG-10 steel cutting core for excellent edge retention. Every blade is heat treated to a 61 on the Rockwell scale and are hand ground to approximately 12° cutting angle with a hammered or sashimi finish.

The Handle

All Enso HD knives feature a black canvas micarta handle with three stainless steel rivets, bolster and end cap. The enclosed full tang handle construction is seamless and ensures strength, durability and balance.

The Edge

Features a double bevel (50/50) edge for right or left-handed use, with a machine-pressed blade kanji. The first two Japanese characters of the kanji are Enso which means Harmony in Japanese. The last three characters are Nippon Sei, which means Made In Japan.
